Many uses for bananas

Go Bananas?

I say yes! Bananas are a wonderful cheap fruit that have many uses. When money is tight around our house we still buy bananas because we use them in so many different ways.

1. Eat them the way they are! Why not with Potassium, 2 grams of protein, 4 grams of fiber, vitamins A, B, C, and calcium and magnesium and so much more. All of that and only 140 calories bananas are a healthy choice for a snack or to go with a meal.

2. For a healthy lunch add sliced banana to your peanut butter sandwich and for a splurge add honey or chocolate chips!

3. Banana Bread YUM! We really like banana bread or muffins in our house. they are a perfect breakfast or snack and they freeze great. Here is a recipe that we enjoy from Moneysavingmom.

4. How about a refreshing Chocolate peanut butter banana smoothie? This is so easy to make and you can half the recipe if you are making it just for you. Here is the recipe we LOVE at our house.

5. Of course add to other fruits for a good fruit salad.

There are many more uses for bananas and at such a cheap price tag. right now the normal price for bananas around her are .55 lb. Of course they go even cheaper but that makes this a great food to buy if you are on a budget.

Recipe: Creamy Crock Pot Chicken

I tried this recipe I saw on a comment on Moneysavingmoms blog and I added few variations of my own and it turned out wonderful!

Creamy Crock Pot Chicken

6 chicken breasts (I used frozen)
1 Bottle of Italian Dressing
1 can Cream of Chicken soup
1 pkg Cream Cheese (room Temperature)
1 cup Chicken Broth


Cook chicken in crockpot with entire bottle of Italian Dressing for at least 6 hours on low. ( I left mine all night and we had it for lunch)

Remove chicken from crockpot and shred with 2 forks (reserving the liquid for later use). Add the soup, cheese, and broth. Mix well, add some of the reserved liquid the chicken to taste and desired consistency. I added probably about 1/4 cup of the liquid.

Serve over rice and with Green beans.

Stock up time!

One great way to lower your grocery budget is to stock up when prices get low on certain items. This week at King Soopers stores there is a sale on Del Monte Canned vegetables. They are on sale for .49, for some that may not be very low, but for me to get name brand canned vegetables it generally costs .65 or more.

When I have it in my grocery budget to stock up on food that is on sale and especially when it is canned food which will last a long time I go for it. If I just bought 10 I would save $1.60 Which may not seem like a lot, but some weeks having that extra $1.60 is much needed to help buy milk, or bread.

Menu Plan Monday

This weeks menu plan has some of last weeks stuff we didnt make, Also I am trying to pick quick, easy, low ingredient meals!

Lunch

Bologna Sandwiches
Cheese Quesadillas
Creamy Chicken over Rice with Green Beans
Creamy Chicken Enchiladas with Rice and Beans
Stirfry
Chili dogs, Chips, fruit
Eat out

Dinner

Spaghetti, Green beans, and Garlic bread
Beef Stroganoff, Corn
Eat at church
Tuna Sandwiches
Dinner with friends
Cheese Pizza
Poppy seed Chicken, Rice, Corn, Artisan Bread

Chicken Stroganoff Recipe

I made a chicken stroganoff that I thought was great and wanted to share with you the recipe.

Chicken Stroganoff

1 can chicken (10 oz)
1 can cream of mushroom soup
8 oz sour cream
1 piece of bacon
Worcestershire sauce
Garlic salt
Lowrys salt
4 crumbled Ritz or club crackers

Put bacon in microwave to cook for about 2 min. Heat oven to 375. Mix soup, chicken, sour cream, and (Worcestershire garlic and lawrys to taste) and crumbled bacon in a 8x8 baking dish. Top with 4 crumbled Ritz or club crackers. Bake in oven about 25-30 minutes.

After I put the stroganoff in the oven I start the rice. I add 1 bullion cube and a little butter and salt to the rice before I turn on the burner.

Serve the Chicken Stroganoff over the seasoned rice with green beans on the side.

I hope you enjoy this recipe, it can easily be doubled to feed more than 4 people or have yummy leftovers.
